Ah...it is Friday. Whew! It has been a busy week of carting the kids here and there and everywhere. This weekend Nurse Boy and I are even going to try to sneak off on a date. Man, I could use one of those! And, NO, I am not wearing anything that is dry clean only. I have learned my lesson. Those dresses are for non-eating events only.
Or, maybe I should wear it. THAT could be my new diet plan!
On to dinner tonight. This one is a recipe I kind of came up with on my own with--you guessed it--CHICKEN!
We will call it:
You will need:
3-4 Chicken breasts
Bag of frozen peas
Wide egg noodles--your choice of no yoke, whole wheat, or whatever you prefer
8 oz. Freshly grated Parmesan cheese
Light Italian dressing
1/2 stick of butter
Italian seasoning, dried parsley, and garlic powder to taste
1. Cook the egg noodles as directed.
2. While you are doing that, cook the chicken breasts on low heat, on the stove top, in a fair amount of Italian dressing. Sprinkle with Italian seasoning, parsley, and garlic to taste. Cook on each side for about 4-5 minutes until cooked through.
3. Cut up the cooked chicken into strips and add to cooked pasta.
4. Next, add cooked peas, Parmesan cheese, about a 1/3 cup of Italian dressing, butter, and sprinkle with some more Italian seasoning, parsley, and garlic. (You can use more dressing if you think it is too dry.)
I know, I know. Just like Martha Stewart, wouldn't you say? Minus the jail time, big bucks, magazine, TV show, and all the craftiness.

We discovered that you don't have to dress up fancy to enjoy a date night out away from the kids.Come to think of it, we would have had to drive for nearly an hour to find a resturant fancy enough to warrent dressing up for.
You can never go wrong with chicken, pasta, and parm! Have a great weekend!
This one sounds delicious. I bet you could put the chicken in the crockpot while at work, come home and make the noodles and the peas and finish it up. I bet you could...couldn't you? :-) I think I will try this after we are back from vacation and when I don't want to have to whip something together fast so Jonathan can go to the "PAYGROUN!"

You know, it just dawned on me that I always pretty much assume it's you posting here. That will explain why your hubby will post some day and I might ask him how his cramps are doing....sorry ahead of time.....
