Friday Fare!

Mrs. Nurse Boy here.

It is Friday and they are calling for snow. It has become a four letter word around here. Yes, I know it really does have four letters, but I mean four letters in that it must NEVER be uttered in my presence. Especially by some bald headed man in a suit mocking me through the TV screen as he sings the praises of a winter wonderland.

Ain't nobody singing in our home. They wouldn't dare. It will send me over the edge.

And, we won't even discuss Groundhog Day, K? I see my shadow all the time and all it tells me is that I need to lose weight. Maybe good old Phil needs to go on a diet and stop predicting that spring will never be upon us.

So, are you ready for a simple and yummy recipe with my favorite ingredient (chicken)? It will fill up your tummy; however, it doesn't promise to be kind to your breath. But, it is worth it. Really.

I noticed that I had some cans of these weird french fried onions laying around after the holidays:

I had two choices. I could find a way to use them now, or throw them away. I am pretty sure they shouldn't sit around for a year. I have only used them in my green bean casseroles for Thanksgiving and/or Christmas. While I do enjoy a tasty green bean casserole during the holidays, I almost never make it any other time.

After a little research, I found a recipe that was a winner.

Crunchy Onion Chicken~
(Not EVER Meant For a Date Night)

Ingredients:

2 cups (4 oz) French fried onions

2 Tablespoons flour

4 boneless chicken breasts

1 egg, beaten

1. Crush the onions with flour in a plastic bag.
2. Dip chicken in egg and then coat in onion crumbs.
3. Bake 20 minutes at 400 degrees until cooked through.

This stuff is very tasty and so simple. Now I just might have to buy some more of these french fried onions before the holidays of 2010.

Happy Friday everyone!

Ooh, I bet that is good!

I found a recipe for those little onion crunchies. Check out Paula Deen's Mashed Bake. OMW ~ YUM! I make it as a side for Thanksgiving every year and it's always a huge hit. Daddy Bub has even been creative and added ham to it and turned it into a breakfast casserole.

Sorry you're in for more s**w. :( It's rainy and too cold for me here. I am SO waiting on that spring weather.

When I was pregnant with one of the boys, one of the church ladies made that for us-and we LOVED it!! When I called her for the recipe, and she told me-I was so surprised-we had everything to make it...because we also buy too much at Thanksgiving for the green been casserole...Now I know how to use it...and it is good!!!

I am totally with you on the "sn*w as a four letter word".

True love doesn't mind onion breath. I don't like them, my wife loves them. I kiss her anyway.

The chicken does sounds delish! I'm going to have to go buy me some FF Onions! I don't make green bean casserole 'cause my husband doesn't care for it and I surely don't need to be eating it all by myself...hello....but we do eat alot of chicken! Thanks for another yummy recipe to add to my collection!
AND can you believe they sent Jesus home???? I thought his dress was so cute and especially the beaded straps. That other designer's dress was HORRID!!!! Oh my word!!! Absolutely HORRID!!! Go figure.

Oh, and I can't help myself. I love that white stuff that falls from the sky. You know....that four-letter word. It just makes all of the naked trees and ugly ground look so much better. :-)

I know...I am so sick of Winter already too. Good grief...we didn't even have a fall, why won't it just go away?
Yum to that chicken. I am so hungry I could eat the screen right now. YUM...the chicken, not the screen.

Cool...I always wondered if those fried onions had any other purpose than green bean casserole topping. I'm definitely going to try this.

I am totally cracking up about your suggestion to Phil to diet, LOL!

And I don't get it... we didn't get any snow that stuck this winter, so it sure doesn't feel like a "real" one yet...

And you call the fried onions "weird"??? Oh my, apparently you've never had a 3-year old who considers them a snack item.

(Ahem) not that a good mother would ever allow her child to snack on them. Bad mommy, bad mommy.

Love the recipe - and my husband is one of those guys who is just gonna load up on onions or garlic regardless of date night. So if I cook it, and he eats it, and no one complains that it's coming back up... well that's a success! :)

Okay... can you explain what Jesus is doing in a dress (according to Jewel)... What did I miss?!??!

That chicken looks great!

And as for the groundhog, I have a whole story about him but all I want to do is fry him up with some potatoes and peas...dinner!

Goodness sakes that looks yummy. I have been needing to use up some potatoes and Adorable Hubby makes the best mashed potatoes ever. I think I have found the perfect thing to go with mashed potatoes.

Must agree, the crunchy fried onions are a breath killer.

I won't use the four letter word but I'm sick of it too and laughed very hard at your attitude.
