Friday Fare!

It is finally Friday and I THINK we have rid our home of a very weird stomach bug. Sweet Pea's stomach bug seemed to only hit her at 3 AM. She would be fine all day long, only to wake up screaming at 3 AM every night to announce that the stomach bug has struck again.

My hands are raw from cleaning everything that doesn't move and my washing machine has been working overtime.

But, last night was a silent one. Silence really is bliss!

So, I have a recipe to share with you. It isn't a dinner recipe, but a special treat. After the week I have had, I deserve a special treat! Plus, I have had several requests for this recipe lately, so I thought I would share it with all of you as well.


The Best Peanut Butter Cookies EVER!

This recipe only requires FOUR ingredients!!!

1 cup Crunchy Peanut Butter (I prefer to use Natural)

1 cup sugar

1 egg

1 teaspoon vanilla

(Yes, that really is all. No flour is needed!)

Mix the ingredients together. Roll into balls and gently smash each ball with a fork to flatten. Bake at 325 degrees for 15-20 minutes. (I like mine a little moist, so I only cook them for 15 minutes.)

These cookies have fabulous flavor! I will NEVER make any other peanut butter cookie since I have found this easy and tasty recipe!

My mom used to make cookies like this. Everyone loved them. Everyone except me. . . I liked them, but chocolate is my thing and that's what should be in cookies, ya' know?

Glad the stomach bug has moved on. We had one too. Oh it was awful!

These are my best cookies! I LOVE THEM. I leave out the vanilla... too many ingredients ;)

I have found that half a cup of brown sugar and half a cup of raw sugar gives just the right combo of chewey middle and crunchy outside.

Hey Lisa, throw a handful of chocolate chips in these babies and I believe you'll be holding heaven on earth! YUMMY.

I just felt that I should share my patheticness with you... It's probably been weeks since I've managed to actually comment on anyones blog and I find myself breaking the comment drought at 2am, mega eager to finish feeding the baby (where I have been doing all my blog reading) so I can comment on a post about peanut butter cookies... I've gotta get out more.

But these bikkies are super yum.

The grandson and I made these cookies in our cookie marathon the day after Thanksgiving. They are really good. You can dip them in melted chocolate chips to provide a little extra special taste.

The bugs are hopping around, and their visit to our house was no delight, either. Glad to hear they are on their way out of your home! I love peanut butter. I've never made a cookie without flour, but I'm all for trying it!

I haven't had peanut butter cookies in forever, yum. They used to be my favorites.

Glad to hear your stomach bug has been squashed. We've had our share of viral issues in the past week or two, and it takes a lot out of you. Worse still when your little one puking her guts out at 3 am. Poor thing. That's a wake up call nobody wants to encounter.

Off to check my pantry for ingredients.
