Friday Fare!

Yes! It is true! We're baaaaaack!!!

No, I didn't have the H1N1. At least, I am pretty sure I didn't. Just a cold and lack of energy. Of course I didn't feel well this week, since I had agreed to work some extra hours at the preschool this week only. (Don't laugh, Nurse Boy. Yes 3 1/2 more hours is extra! Hey, I still have 3 kids and a husband to take care of!) Oh, and let's not forget the preschool field trip with a shaky voice, at best.

So, I hope to get caught up on all of my bloggy friends this weekend! Thanks for all of your words of encouragement!

Since today is Friday Fare and we have been battling some colds around here, I am going to share one of my favorite dinners when I am not feeling so great.

Who am I kidding? I almost always love this meal!

It's breakfast!

I mean who has time to actually make a hot breakfast while trying to get the kids out of bed and into clean, appropriate clothes every morning? Not I! I will share a little secret though. I freeze pancakes all the time. Then, when I feel like serving up a hot breakfast, I push "reheat" on the microwave.

Yep. I am THAT lazy!

So, what I am serving up tonight? Homemade pancakes with a special twist!

Favorite Oatmeal Pancakes

(This probably makes 12-15 pancakes.)
1 1/4 cups flour (white or wheat)
1/2 cup oats (old fashioned or quick)
2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cup skim milk
1 egg, lightly beaten
1 tablespoon vegetable oil
2 or 3 teaspoons cinnamon

Throw it all in a bowl and gently mix together. Cook on medium high, a few minutes on each side.

Now for the twist...
1/2 stick of butter, room temperature
3 teaspoons of cinnamon
1 packet of splenda (or use sugar, probably 2 tablespoons)

Mix together...


Oh, yeah! Now THAT is the way to eat a pancake!

Cinnamon, sugar and butter... YUMMY!

I always mean to freeze extra pancakes but usually I just gobble them all down and feel a bit yuck afterwards. So good on you for your will power to follow through!

That sounds great. I do not like breakfast for breakfast. So i like to do breakfast for supper sometimes.

I can eat breakfast any time of day, and pancakes are a favorite of mine. These sound yummy.

So glad you are feeling better and are back!
My DH just loves pancakes but I just don't like to make them but I may be nice and make these for him tomorrow morning!

Ohh, now I am STARVING!! I want some cinnamon butter! Yummo!!

I usually put peanut butter and syrup on my pancakes. It sounds gross, but is absolutely delicious!!

It is the little things like your butter that I love to do-easy, but so memorable for the family-Love this idea...Will be copying you this weekend....

Kmama is right on... peanut butter and syrup on pancakes ROCKS!

Those pancakes sound yummy. We have breakfast for dinner at least once or twice a month. So good! :)

Yay! So glad you are back and feeling better! Hope the kiddo's are too.

I also freeze left over pancakes when I make them. That way Gary can heat them up before school!
