Friday Fare!

So, it is finally Friday. It looks like it is going to be a beautiful spring day today and I am going to celebrate by going SHOPPING! However, snow is in the forecast this weekend. Grr... Does it mean that I am old since I keep finding myself talking about the weather? Really, I can be a very interesting person, I just want spring to come and STAY!

Tonight Nurse Boy and I are getting out and leaving the kids behind with a babysitter. So, I made this dish the other night. It is one of our favorites, but I am not going to lie. My kids aren't big fans. My kids are extremely picky. And, no, I DO NOT encourage that behavior. It is just a fact I must face. And, they must face the fact that you get what you get and don't throw a fit.


Creamy Chicken Dijon over Noodles




(This picture really doesn't do this dish justice. It is a very tasty and healthy meal for everyone.)

You will Need:
1 Tablespoon olive oil
1 teaspoon minced garlic (about 2 cloves)
1 lb. skinless, boneless, chicken breast strips
8 oz. dry egg noodles
7 oz. sliced mushrooms (You can use canned, but fresh is so much better!)
1/4 cup Dijon mustard
1/2 cup light sour cream OR non-fat plain yogurt

1. Saute olive oil, minced garlic, and chicken for 7 or 8 minutes or until chicken is no longer pink. (Meanwhile, boil the egg noodles as directed.)

2. Add mushrooms to the chicken and cook for a minute or two.

3. Mix together the Dijon mustard and sour cream (or yogurt). Add to bubbling chicken and mushrooms and let it simmer for another minute or two.

4. Serve over noodles. (This recipe serves 4.)

You can even mix in a veggie of your choice, or serve it on the side. Of course, my kids think mixing stuff together is gross. What do they know?

This is excellent with a salad and some fresh fruit.

That's exactly what I say. You get what you get and you don't get upset. Doesn't always work here though! I don't encourage that behaviour either but it is what it is.

I've now stopped making dinner around my kids and started making it around my hubby and I. No matter if I made every single dinner the kids liked they could snub it on any given day.

I've come to the conclusion that kids are never going to want to eat anything even remotely "suspicious".

I swear that AM can spot a chopped onion from 50 yards.

I usually make what MotH and I want to eat. If AM won't eat it, he can make himself a pb&j sandwich AND clean it up.

I will not make two meals, but I'm not interested in the dinner battle either.

Lucky for me, he really doesn't care for pb&j either, so he usually just eats what we have, lol.

Thanks for another recipe! Mrs. NB! I will probably put broccoli in it when I make it to add a little green and color.
Have a wonderful time tonight with the hubs and our son was a bit of a picky eater, too. Nothing green and a bunch of other stuff but he did like meat and potatoes of any kind so that made it fairly easy to cook for him.

Now that is a really yummy sounding recipe. I would put peas in it because I enjoy torturing my boys by adding peas to otherwise palatable food. When they ask with a look of extreme agony on their little faces, "Why Peas?" I tell them I did it because my sole purpose in life is to torment their taste buds. I know I'm a "Momster!"

I laughed at your last comment until I had 'pussy' discharge, I then immediately called my doctor, as instructed. He told me not to listen to deranged male nurses for blogging inspiration. I of course took his advise, like I take all his advise, and completely ignored it and am sharing some...er, poop inspired humor of my own over the next two days.

Thanks you two for making me laugh, and helping me find my muse.

Please tell me they still throw fits. I tell my kids that and the fits continue.

MR. unfortunately those pussy discharges end up coming to CT for abscess drainages. Yuck, they smell worse than than a code brown.

OK, I must fess up, Suz. Yes, they do sometimes throw fits. Bruiser has been known to muster up TEARS over his dinner.

Before we even sit down.

Then, he will try the meal and tell me he LOVES it after all.

He is lucky he is still alive.

Seriously.

Sweet Pea just pushes the food around on her plate and lives on raisins and bananas. Oh, and milk. Lots of it.

Ya just gotta love meal time with the kiddos!

The recipe sounds delicious, but I am wondering if I need to follow the previous comments around the blogosphere to find out what its all about, or if I don't really want to know!!

My little Mousie-girl is the fussiest of my 6 children. She can cry just at the thought of a vegetable, especially potato. And if there is no pasta in the meal, well in her mind that is ample and reasonable cause for a tantrum. I can't remember the number of times she has gone to bed hungry but still refused to eat her dinner.

i believe I'd add a green veggie. That dish may taste good, but looks rather icky on the plate. LOL
