Friday Fare!

Mrs. Nurse boy here.

Today is Good Friday and all of my kiddos are home for a four day weekend. I am looking forward to our holiday weekend and just being together. We started off our festivities with one of my dearest friends and her adorable son.

Aren't ~L~ and Sweet Pea cute together? We already have an arranged marriage set up, thankyouverymuch. Their family had been so supportive of us for over 11 years. God placed them in our lives and, while we don't get to see them as often as we would like, we are very blessed by their friendship. It is so much fun to watch our kids grow up together!

Today I am going to share a recipe that was sent to me by my friend, Imperfect Mom. You may have noticed some of her funny comments on our blog from time to time. Yes, I realize that some of her comments are funnier than my actual posts. Can I just say that we have some of the best readers? I love reading your comments. You all are so funny!

I have the privilege of knowing Imperfect Mom in real life. She thoughtfully sent me this recipe and assured me that her son loves this stuff. Well, I won't lie and say my boys loved it, but it was deemed "edible". I'll take that! Nurse Boy and I really enjoyed it. I love how simple it is to make! That always makes me like a recipe even more. I am lazy like that. So, read on my fellow lazy cooks. If you aren't a lazy cook, than you are reading the wrong blog. Martha Stewart does not live here.

Apricot Glazed Chicken
(Think Sweet-n-Sour Chicken)

1 cup apricot preserves (I think peach preserves would work as well.)
2/3 cup Russian dressing (It works best with Russian, but French or Catalina will work in a pinch.)
1 envelope onion soup mix
3-5 FROZEN boneless, skinless chicken breasts

Put FROZEN chicken in a crock pot. Mix apricot preserves, dressing and soup mix. Pour over chicken. Cook on low 5-7 hours. Serve over rice.

It is that simple!

Enjoy your Easter weekend! I love Easter. It is one of my favorite holidays. One where we are reminded that we have a Savior. One who died on the cross and rose from the dead! It is a beautiful story of love. More love than we can even imagine. Love for me. Love for you. It moves me and brings me to my knees. I pray that you and your family will be moved by the very true story of our Risen Savior this Easter.

HOW GREAT IS OUR GOD!!!

Little L and Sweet Pea look adorable together!!!!!! So sweet.

The recipe looks yummy. My kids have been very good about trying all of the new things I've been making. They haven't wanted to eat more than a few bites of any of it but all I ever ask is they at least try some. My hubby and I are enjoying the new meals though. So we're happy!! Maybe one day the kids will catch on.

I hope you and your family have a Happy Easter!

Much love from NJ,
Sue

Those kids are just too cute for words! Think of how adorable the grandkids will be!

Thanks Mrs NB and IM. I'll have to try your version. I make apricot chicken all the time, and the boys do eat some of it (as long as it's legs, they like to gnaw) it's my absolute easiest meal. My version sees frozen chicken legs dumped in the bottom of the crock, a tin of apricot nectar dumped on top of that, a packet of french onion soup mix (or chicken noodle works good too) dumped in next and cooked till we're calling the boys inside. At that point I throw in a few handfulls of soup pasta (looks like big grains of rice) and in 20 minutes I'm ready to serve it.

Yes, my boys take 20 minutes to get inside and wash their hands and whinge that they don't like how the other one is looking at them and pick their nose and get sent back to wash their hands again and fight over the step stool and come out soaking wet and get sent to dry off and complain that I'm not giving them icecream for dinner and sit down and get up and get threatened that if they don't sit and stay they will get a very sore backside and... I'm assuming you are getting the picture by now so I might stop.

Anything your child deems 'Edible" is a start in the right direction. I have had several kids come through my sunday school class who will eat mac & cheese and chicken nuggets, and that's it. I was a picky eater as a child, but not that picky.
