Friday Fare!

Mrs. Nurse Boy here, of course. I have yet to motivate Nurse Boy to write a Friday Fare! post. I think that is a plus for all of you. He is mostly famous for PB&J around here. And, cereal. For any and all meals. I worry when I leave him in charge of dinner. The kids will survive, right?


Today I am going to step away from chicken. Sometimes I have to mix things up a little bit around here. Stay with me people...


So, today's post is an answer to leftover ham. Yes, we still have leftover ham around here. While most of it made it's way to my freezer Sunday night, I made one of our favorite ham dishes on Monday night. I realize this isn't an original idea. Yes, it is simple. Yes, you can change some of the ingredients to your liking. And, YES, it is delicious!




Can you tell I forgot to take the picture until after dinner? Trust me, it is delicious.


Ham and Rice Casserole
2 cups of cooked rice (I use brown rice)
1 bag of cooked veggies, your choice (Peas are our favorite)
1 can cream of chicken soup, fat free (Or, the soup of your choice. Cream of mushroom is also yummy.)
About a 1/2-1 cup of milk
About 1 1/2 -2 cups of cut up ham
About 1 cup of cheese and some to sprinkle on top
(I personally think fresh mushrooms would make this even more delightful, but the kids simply do not agree, so I resist the temptation to throw them in.)
Seasoning to taste--I add a little garlic, parsley, pepper, and dried onion.


Mix all of the above ingredients together and throw it into a greased casserole dish. Bake at 350 degrees for about 30 minutes to heat through.


And, just for the record, you COULD add cut up (cooked) chicken instead of ham. I'm just saying...

I need to remember next time I'm looking for inspiration to go back through your friday fare posts, there has been a few I have meant to try (including this one, I reckon I can get the kids to eat a spoonfull or three before they realise it has veggies in it) but I always forget. I'm guessing this would work just as well with diced up chicken which is more common as a leftover around here.

That casserole looks delish even after dinner. Yum!

Yea the kid will survive when Nurse Boy feeds them. My hubby has been in Cali all week and Peyton hasn't had one cookie (pop tart). That's always the first words out of his mouth in the morning to give her to eat. I don't think they're nutritious but it's better than nothing I guess, right?

Yum, ham, peas and rice, how could you go wrong? My boys hate peas though...well except #7 he would eat the peas and leave the rest, #6 would only eat the ham and #5 would only eat the rice. Sigh, if only they didn't think it gross to eat off each others plates, the floor is fine but, gasp, the tears and gagging horror if a brother has touched it.

I agree chicken and mushrooms would be wonderful, maybe a little curry in place of some of the spices.
