Heathly and Sweet

I often find myself searching magazines and the Internet for healthy desserts. You see, I love me some sweets. So do my hips and thighs. And, by love, I mean they (my hips and thighs) like to hold on and never let go. So very thoughtful. I do not love my hips and thighs. I could start listing all of my imperfections here, but I am going to try to stay on topic.

I often try some crazy recipes in hopes that healthy ingredients mixed with chocolate will fool my taste buds, as well as my hips and thighs. The results often end up in the trash, thus fooling no one.

My latest attempt came last week when I tried 3 (yes, 3!) new "healthy" desserts. The secret ingredient? Baby food. Sweet potato and carrot baby food, to be exact. I know what you are thinking. YUM!

No?

Well, you would be CORRECT! I could TASTE the baby food. It wasn't tasty. It wasn't sweet. It wasn't good. It was slightly mushy and very shiny. However, my kids did eat it. Shh...don't tell them what is in those "cookies!" I froze them and am saving them for a special treat.

So, all of my baking left me very disappointed. Then we had the blizzard of '09 this weekend and this mama needed to bake. The computer and I were in a search of a healthy chocolate chip cookie.

Something hearty and delicious.

With wheat germ.

And whole wheat flour.

And rolled oats.

But, don't forget the chocolate and sugar!



(So, I realize some of the ingredients might negate some of the healthy ingredients, but it works for me!)

I came across this recipe and made some alterations based on our preferences and what I had on hand.

These are fabulous! I am not lying!

Healthy Chocolate Chip Cookies
1 cup butter
1 1/2 cup brown sugar
2 tsp. vanilla
2 lg. eggs
2 1/4 cup whole wheat flour
2 tsp. cinnamon
1 1/2 tsp. baking powder
1/2 tsp. salt
12 oz. chocolate chips (dark or semi sweet)
1 cup rolled oats
1/3 cup wheat germ
2/3 cup shredded coconut
1/4 cup. honey

(You can also add 1 cup of chopped nuts. We passed, due to picky kids, but feel free to add them if you like.)

Cream butter until fluffy. Add sugar and vanilla and cream together. Add eggs one at a time. Mix well. Add flour, cinnamon, salt, and baking powder. Stir in oats, wheat germ, coconut, honey and mix well. Mix in chocolate chips. Drop by teaspoonfuls onto greased baking sheet. Bake at 375 degrees for 10 minutes. Makes about 60 cookies. (They do freeze well.)



These cookies have wonderful flavor and excellent texture. We loved them!

These sound great. My friend made pudding cookies one time and ... oh! How heavenly they were. *sigh* I'm going to bed so I can dream about them....good night! :-)

With that comment, Mr. NB, you've found yourself inducted into the Hall of Fame for Guys That Say the RIGHT Thing. Congratulations, though you'll be lonely there.

I've heard that you can mix brownie mix (or was it chocolate cake mix?) with a can of pumpkin and end up with a lower fat/calorie version that's very tasty.

I haven't tried it, but that's what I hear.

Made these tonight. You are a new hero at our house Mrs. NB! I don't know if I got 60 cookies though, because they disappeared from the cooling rack as quickly as I pulled them from the oven!!!!!
