Friday Fare! With a bonus recipe!

It's Friday! Man, do I love Fridays! We have had a wonderful week of delightfully cool weather and nothing but soccer. The boys have loved soccer camp! They have bounced out of bed every morning running for their shin guards. They have also spent every afternoon comparing the number of goals each of them scored during their scrimmages. Ah... brotherly competition. There is nothing else like it. NOTHING. (And, thank goodness for that! ;0)

Last night we decided to prepare dinner and let it chill in the fridge while we headed to the pool. That's right, we took three hungry kids to the pool and swam the night away. They didn't even complain about being hungry until the clock struck 8 PM. I know, I really should keep them on a schedule. Really, I do most of the time, but summer is when you have to mix things up. That is one thing I remember fondly about summers during my childhood. My mom would let us get off schedule, stay up late, and eat crazy things for dinner. Our favorite summer dinner? A scoop of vanilla ice cream in a half of a cantaloupe. Yum.

But, I am not that nice. Nope.

When we returned from the pool, our dinner was ready and our kids were starving. They devoured dinner. Honestly, I don't know if they loved the meal or if they would have eaten cardboard with butter, just as long as they were fed.

Today, you get 2 for 1. (Ya know, kind of like Payless Shoe's BOGO sale? Man, do I love those sales! I buy a pair for Dimples and get a pair for me. I buy a pair for Bruiser and get a pair for me. Buy a pair for... Oops, I digress.) I am going to share both of the salads I made. They really were fabulous and my kids really did eat them...and, that is saying a lot, people!

Sweet 'n Chunky Chicken Salad


(4 servings)
9 ounces cooked and roughly chopped chicken breasts
1 cup chopped cucumber
2/3 cup red seedless grapes, halved
2/3 cup chopped apples
1/2 cup plain, fat-free yogurt
4 tablespoons fat-free mayonnaise
2 no-calorie sweetener packets
1/2 teaspoon lemon-pepper seasoning
dash of salt

1. In a medium bowl, combine yogurt, mayo, sweetener, lemon-pepper, and salt. Mix well.
2. Add chicken and stir until fully coated with yogurt mixture.
3. Add cucumber, grapes, and apples. (The smaller you chop these ingredients, the better. At least that is my humble opinion.)


This stuff is a wonderful summer recipe. It is delicious as a sandwich or on crackers!

I also made this Apple Slaw



(5 servings)
1 medium Fuji apple
1 medium Granny Smith apple
2 cups dry broccoli slaw mix
1/2 cup plain fat-free yogurt
1/2 teaspoon honey
3/4 teaspoon Splenda, no calorie sweetener

1. Cut the apples into matchstick-sized strips and place in a large bowl.
2. Add slaw mix and toss.
3. In another bowl, mix together yogurt, honey, and Splenda.
4. Pour over slaw mixture and stir well. Chill for at least 30 minutes before serving.

This stuff is good, people. DIMPLES ATE IT AND TOLD ME IT WAS DELICIOUS!!!! He normally won't touch anything that resembles a salad or slaw. Honestly, I would proudly take this stuff to a potluck. Or just continue serving it to my family.

If the apple doesnt still look like an apple my boys wont eat it(unless it is completely unrecognisable as ever having been an apple). However I think that looks yummy, both of them do! Gotta love a BOGOF!

Yummy. I've never met a chicken salad I didn't like and that apple slaw sounds delish! :)

My youngest was very fussy about food when he was little. He would sniff it before he took a bite, and he didn't like all sorts of things.

He's much better now at trying stuff and he loves salad (he used to hate it).

of course I was spying on you in your home, where do you think I get my blogging ideas, lol!

I totally embrace the "summer" philosophy. Since Sven and I are both teachers, any semblance of routine is totally shot. The kids are getting into it. We travel, we play, we take extended naps in the middle of the day then stay up until midnight...it's a blast.

An added bonus: I have several Spongebob Squarepants cartoons memorized now. And my 19-month-old can sing the theme song.

I think I will take the second recipe to our family reunion. Wait we are tenting it, might not be easy to chill! I really hate preparing for pot luck dinners. I love eating them though. I am a eater not a preparer!

Still gotta love that soccer. My 13yr old, is going to our local MLS stadium to meet the players and shot the ball. They get a free jersey and autographs. Then the next night participate in the All star MLS ceremonies and watch the All Star game. Is he in heaven or what?
