This is the "Leftover Edition." Chicken leftovers, of course!
Since my husband is a nurse, his lunch break is short. Sometimes nonexistent. He often "inhales" his food so he can get back to his patients. So, I cook accordingly. I almost always make more than enough food for dinner. Nurse Boy and I rely on leftovers for our lunches. When we are cleaning up our dinner, I usually pack Nurse Boy's lunch at the same time.
And, sometimes I cook WAY too much. Or, we get tired of the leftovers after a few days. So, what's a girl to do?
Get creative!
The other day I had 3 chicken breasts, hot dog buns, and mozzarella cheese in the fridge. So, I came up with a delicious sandwich creation.
You will need:
3-4 cooked, cut up chicken breasts
1 can of rinsed black beans
1 cup of mozzarella cheese
1 cup of salsa
taco seasoning or chili powder, optional
Throw everything into a pan on the stove top and simmer on medium heat until heated through. Serve in a hot dog or hamburger bun.
I use almost the same recipe for chicken soft tacos, but I replace the mozzarella cheese with 2 cups of cooked, brown rice and increase the salsa by another cup. This mixture can be topped with cheese and sour cream and served in flour tortillas.

Sounds yummy! I am so not creative in the kitchen, and our leftovers usually end up in the fridge until they get thrown out. I know, their are kids in Africa starving to death! And I would totally send them my leftovers if they wouldn't spoil on the way.

Every now and then, I tell Sir Nottaguy-Imadad that we are having mustgos for supper. That is code for look through the 'fridge and decide what must go before it needs to be thrown out. It's amazing the creations we have come up with!

I am impressed-we use left over chicken to make chicken tacos, but that is it-My husband will think I turned into a cooking genius if I make this...
I love it if I can make a whole new meal out of leftovers. Wolf thinks 4 nights in a row of corned beef is just a bit much... I try to tell him if he takes some for lunch each day as well I could get rid of them in 2 or 3 nights :)
I was reading, reading, reading, I got to the end of the recipe and I went "wow, they have a button! I wonder how long they've had that?" then I read it was new... glad to know I'm on the ball with some things... so how long have you had 3 kids? ;^)
That sounds great. I sure wish I knew how to cook and liked it. I am a throw it in the oven and be done kindof girl, although that didn't sound too hard. I may have to try it.

Most anything will freeze and I've learned to do that instead of throwing out leftovers, now that we no longer do lunches for work.
I tend to make ALOT of anything that I make, too.
Some things that freeze really well are chili, soups of any kind actually, tuna noodle, pasta dishes.
Of course, it is just me and the hubs and we aren't picky but it is nice to just pull something out of the freezer, nuke it, add a veggie and we're all set!
