Friday Fare!

It is Friday and we have had a long week. Sweet Pea started the week off with a GI bug that wore the both of us out and then we ended the week with yet another garage sale.

I just love it when I can make money on my JUNK! It simply makes my day. Plus, I love to purge. I hate to fill the basement, garage, and closets with things we "might" need in the future. Nope. Not going to do it.

I remember a sermon from a long time ago when we discussed that one might own too much stuff if you can't maintain everything you own. Honestly, I think that is a tall order since my van seems to always resemble a dumpster on wheels, but it is time to get rid of the stuff that has remained dusty all year.

On to dinner for tonight. I need something easy and simple. Today I am using BEEF. After all, it's what's for dinner! I kind of stole this from Rachel Ray, but I simplified it. She rambled on about homemade dough, some sort of egg wash, and certified organic ingredients.

Whatever.

She doesn't have three kids who are certain they are STARVING once she starts to cook dinner.

What does she know?

Cheeseburger Roll Up
Ingredients for one Roll Up:
About 1 lb of lean ground beef
Ketchup
Mustard
Relish
Grated Cheese
Pizza Dough in a tube--how is that for easy, Rachel Ray?


First, brown your ground beef. While it is cooking, add whatever you would normally add to flavor your burgers. For me, that is dried parsley, dried onion, garlic, and Italian seasoning. Once it is browned, remove from heat and drain any fat that might be left in the pan.


Next, add ketchup, mustard, and relish to taste. Mix well. Go ahead! Taste it!

Now, roll out your dough and cover it with about a pound of the prepared beef, leaving about an inch all around. I know, you can tell I am no Rachel Ray by looking at the picture. Can you say, "IN A HURRY?"


Add cheese. YUMMO! Tuck the top and bottom. Now, roll from left to right until it looks like this:

This is where she rambled on about some egg wash. I just put two slits in the top and made sure the seam was on the bottom.

Bake according to the instructions on the tube you just threw in the trash.

That's right.

Go dig it out of the trash can.


Here is the finished product. We had it with roasted veggies. It really tastes like a cheeseburger. You can even make extra and freeze a roll up or two!

I have never seen pizza dough in a tube but I'm guessing I can use my "chuck the ingredients in a bowl, stick the lid on and shake it till it's right" dough recipe... I really want to remember to try this one. I think my boys might mistake it for a giant sausage roll and accidentally eat some!

Oh wow! That looks awesome and so fun to make! For someone who cooks of course. I don't. So it would be a disaster for me.

I'm so behind...I still have to do that award thing you passed on to me. I will shoot for this weekend. No, I'm not shooting anyone...yet anyhow.

Good luck on the yard sale! I tried one last year and it was a flop.

Yummy! I simplify and tweak Rachel's recipes too, sometimes the ingredients are too obscure and the prep is too time-consuming...

I assume you made this yesterday. If you are preparing tonights dinner at 8am, you are awesome. I don't even think about dinner until I walk through the door from work.

Your writing always cracks me up(dig the tube out of the trash)!! I think it's great that you make the time to blog... wish I could do it. I made your baked ranch chicken breast recipe last night with roasted veggies... the whole family loves the chicken! The leftovers are great sliced on a salad. Have a super weekend =)

I saw that episode of RR!! I was wondering if that was actually good. Sometimes she makes some crazy stuff, but since you've kid-tested it I'll have to give it a try!

oh well, I'm used to getting things out of the trash, as I proved on my post about the pancakes, lol!

I haven't seen pizza in a tube but I'll bet I could find it! Or just use my regular pizza dough recipe.

Oh no, we had the worst yard sale experience a few months back, I don't think I'd ever go that route again. I'd be happier donating it to Goodwill. Although I think I need to take your advice and purge some of our junk, we hold on to stuff for far too long. Maybe a summer project?

I love Rachel Ray's recipes, not to crazy about her though. I find her a bit grating and the catch phrases (delish, Yummo, EVOO) make me want to kick her in the shins. I like your adaptation to the burger recipe though, I might have to try it. DELISH indeed. ;)

I made it tonight!!!! YUMMY!!!! I had to just try to remember it since I didn't have a computer at home so it's a good thing it was so easy! The boys straight away told me they didn't like it as their plates hit the table (so no diferent to any other night) but they both ate it all so I'm guessing it passed muster. YAY... another meal to add to my "food kids will eat" list!
